Though Nuits-Saint-Georges is predominantly red wine territory, Domaine Robert Chevillon crafts a small quantity of white from old Chardonnay vines planted in limestone-rich soils just outside the village. Labeled as âVieilles Vignes,â this cuvĂ©e comes from low-yielding vines aged 50+ years, farmed sustainably and harvested by hand. The 2021 vintageâa cool, classically styled yearâemphasized finesse and structure, making for a particularly refined white.
Fermentation takes place in oak barrels (a modest portion of which are new), followed by 12â14 months of aging on lees, with gentle bĂątonnage as needed.
